The Shun Combination Whetstone will help put that factory edge back on your Shun cutlery, if/when they need it. The stone will restore the dullest blade close to its original state in no time. The dual-sided whetstone contains two types of ceramic grit: coarse (300 grit) and fine (1,000 grit). The stone needs to be completely soaked for 10 to 20 minutes prior to use. Always make sure the stone stays slightly wet throughout the process. Shun recommends sharpening once a month for frequently used blades, and every 3 to 6 months for others.
